Our farm consists of 11ha of sea land over 2 leases located in Moreton Bay, Qld. Processing of our oysters is carried out on beautiful North Stradbroke Island. All organically grown Rock Oysters are native to the local area and grown inside the bay which gives them the delicious creamy sweet but salty flavour unique to our region.
Oysters are an important part of the ecology and aquaculture of the region and here at our farm we maintain a clean and healthy environment for both our oysters and the abundant sea life that roams the area.
Our Oysters take up to 3 years to grow and are seasonal in their condition. Meaning from September to March (weather depending) our Oysters are in season and ready for sale. Outside of these times the oysters take time off to spawn, releasing more Oysters into the bay. One fertile Oyster can produce 1 million spawn.
During the off peak season (April - August) the farm work continues with maintaining the produce, catching up on farm maintenance and laying out spat catchers to continue the growth cycle of the farm and keep carbon emissions low.

Owning an oyster farm means working alongside Mother Nature, moving with the shifting tides and adjusting schedules to suit weather conditions.

While the days are spent harvesting, grading oysters, doing maintenance work and looking after the ecology of the farm - there is always a chance to fish for your dinner too.
